Muffins of Praise

While I was waiting for my cinnamon swirl bread dough to finish, I decided to make good use of my time and make a tasty thank you treat for a friend. I came across this recipe while perusing The Pioneer Woman's website and knew, being a girl from the south, I had to try it out. I had purchased the ingredients that I didn't already have on hand earlier this week but just hadn't had time to make them.

I cranked up my praise music on my iTunes to get me "pepped up" and praise the Lord for so many blessings he has bestowed upon my family while I cook. Yes, I praise and worship while I cook! It's kind of like shower singing for others. I can sing as loud as I want and only my family and the good Lord hear my praises! Try it some time...

Any how...I digress. Here is what I came up with for these wonderful Pecan Pie Muffins which I may now rename my Muffins of Praise. :)

I started with about 1 1/4 cups of whole pecans in a ziploc bag and used my meat tenderizer hammer, I know not the main reason to have this tool, to "chop" up the pecans.


I then dumped then a medium size bowl and added the brown sugar and flour pictured below.


Stirred them together with a fork to make sure I got all the brown sugar broken up.
 Next I added eggs and softened butter. Honestly I think next time I will melt my butter to incorparate it better but it still worked.

 Slightly beat your eggs before putting them with the butter.


I then mixed those two ingredients on medium for about a minute.
I then added the dry ingredient mixture and mixed until just thoroughly incorporated.


Using my large scoop I scooped the mixture into 12 greased muffin cups. Place in my preheated 350 degree oven for 20 minutes. 


Final Product: Doesn't look pretty because the family got ahold of them before I could get the picture taken. But rave reviews from all!
